MOLLIE’S FAMOUS IRISH SODA BREAD
Why is Soda Bread synonymous with the Irish and St. Patrick’s Day? In the 1800s, bread in Ireland was made at home rather than in bakeries.
The flour the Irish used was from soft wheat which is naturally low in gluten and does not interact well with yeast, using baking soda instead. Our version of Soda Bread adds butter and plump raisins which make this treat so much more delicious. Traditionally these more indulgent additions were only used for special occasions.

JOVIAL PASTA
EASY FUSILLI PASTA WITH SPRING GREENS

INGREDIENTS
- 1 package of jovial Fusilli (Einkorn, Brown Rice or Cassava)
- 1 kg (a little over 2 pounds) turnip greens, broccoli rabe, spinach, or other spring greens
- 3 tablespoons Extra Virgin Olive Oil
- 4 garlic cloves
- 4 salt cured anchovy fillets
- Dried red chili flakes to taste (optional)
- Salt to taste
- 1 lemon
DIRECTIONS
- Fill a large pot with water and place it to boil with a generous amount of salt. In the meantime, rinse the turnip greens.
- Once the water comes to a boil, blanch the greens in the water for 5 minutes. Remove the greens, without dumping out the water and run them under cold water to stop them from cooking further.
- Finely mince the garlic cloves. Roughly chop the blanched greens and set them aside.
- In the same water the greens were blanched in, cook the pasta according to the instructions on the box. While the pasta cooks, heat 2 tbsp of olive oil in a large pan on medium heat. Once hot put the garlic to cook in the oil, lower the heat if it begins to smell burnt.
- Rinse the anchovy fillets, pat them try with a paper towel, and put them in the oil along with the garlic. Cook everything for a few minutes and break apart the anchovies so they incorporate with everything else in the pan.
- Place the chili flakes into the pan as well (if desired) and let cook for an additional minute. Put the roughly chopped greens into the pan and mix to incorporate with the rest of the ingredients. Raise the heat slightly, if necessary, but don’t char the greens. Cook for about 5 minutes or until the greens look soft. Taste and add salt if needed.
- Once the pasta is cooked, drain it, and throw it directly into the pan where the sauce is cooking. Mix everything together for a few minutes on low heat and add the juice of a lemon and the remaining tablespoon of olive oil at the end and mix. Serve immediately, garnished with additional chili flakes if desired.

Spring brings a bounty of fresh veggies to the table! One of our favorites of this colorful season is asparagus! Asparagus, which can be the star of the show in any recipe, takes patience to cultivate, but is well worth the result. It can take quite a while, 3–4 years, to grow to an edible length, making it something of a luxury vegetable. Most of the crop grown in the U.S. is green and purple; the same seed grown under a blanket of soil produces a mild, white variety that’s popular in Europe and South America. Asparagus is delicious boiled or steamed until crisp, tender and topped with vinaigrette, or simply pan-seared with salt and pepper.
- GREEN – Green asparagus gets its color from sunlight. When the plant breaks through the ground, the sun hits it, turning it green.
- WHITE – For white asparagus, sunlight is prevented from touching the plant by piling dirt on top of the stalks so that the asparagus matures underground.
- PURPLE – Purple asparagus was developed in Italy, and like the white, is considered more of a specialty and is sweeter in flavor.
